Vanilla Sponge Cake
Preheat Oven : 160 degrees Celsius
Recipe :
Combine your dry ingredients - 2.25 cups of self rising flour + 3 tsp baking powder + 1 tsp salt
In a mixing bowl combine : 1/2 cup olive oil + 7 egg yolks + 2/3 cups water + tsp of vanilla extract +1/2 tsp lemon extract (you can substitute with orange if you prefer) then add dry ingredients
In second mixing bowl combine : 7 egg whites + 1/2 tsp cream of tartar + 3/4 cup white sugar (beat this until soft peaks form)
Fold together contents of two mixing bowls , put on 2 round 9 inch baking pans
*best pans I have purchased are from Fat Daddio’s! Use them for years and they still look amazing !
Bake at 160 fan forced for 45 minutes
Frosting :
Beat together heavy cream (600mls) , cream cheeze (250 grams) and sugar (according to how sweet you wanted the frosting)
If using food colours - use the gel base not the water base : )
Coat the cake lightly then pipe the rest of the cream cheese in swirls to get the flower effects use tip - Wilton 2D
